The single most important piece of equipment we use for making pizza at home. To reproduce our setup you'll need the 16 inch Bakinsteel Pro or two original 1/4 inch steels stacked on top of each other.
Cutter Pan
We use a 14 inch cutter pan for our Cracker and Bar pizzas. The angled sides help create the crispy edge and make it easier to slide the pizza out of the pan. You can also use a straight sided pan, but we recommend the cutter pan.
Chicago Deep Dish Pans
We like nesting pans because they take up minimal space for storage and the slight angle makes it easy to remove the pizza after cooking.
Detroit Pan
We love these 8x10 square pans. They make it easy to get an incredible cheese edge that releases easily from the pan. Two pans fit perfectly on a Bakingsteel. So easy to wipe clean, these are the pans to get.
Pizza Disk
Buy these disks once and never replace. These disks are treated with the same PSTK non stick coating as traditional Lloyd Pans. Our go to equipment for making our American style dough.
Rolling Pin
Rolling out dough can be a pain. This rolling pin is 18 inches and heavy duty. If making our Cracker crust we highly recommend this. It makes rolling out dough so much easier.
Bosch Universal Mixer
After going through several mixers from another brand, we switched to the universal plus with the dough hook extender a decade ago. Thousands of batches of dough later, its motor is still an absolute beast. For the price, we don't think there is a better mixer for all things dough.
Proofer
Whether we need the dough to overcome some cold, drafty days and nights, or accelerate fermentation a little, we love this proofer. Makes proofing at precise temps incredibly easy. Simple to move around, it also doubles as a slow cooker.
Thermoworks
An accurate thermometer in the kitchen is essential, and not just for dough. We use it all the time for hitting the perfect temp on meats, and checking oil temperatures. We tried a few on Amazon, but none were as accurate or easy to use as those from Thermoworks.
